Based on a traditionally historic curation process, the Spanish are renowned for their mastery in the trade of curating some of the best prosciutto in the world. This simple yet timely and effective process all starts with preparing the fresh prosciutto hams with care. The meat handlers then store the prosciutto hams in storage facilities that keep the meat well preserved and maintained in order to be developed over time. Set on a strict rotation schedule. The curing prosciutto hams are frequently monitored and transferred to different rooms with varying temperatures and humidities so that the flavors continue to mature and develop that rich taste we all know and love. After two years the prosciutto hams are then processed and baked to be sold.
